This is a great pizza dough to make at home.
Pizza Sauce Recipe
I use a 70 % hydration for my dough.
Recipe
350 grams Flour. I use bread flour 250 grams and 100 grams of wheat flour.
245 grams of warm water
3 tsp of brown sugar
2 tsp of sea salt. I like sea salt for all the minerals in it.
1 tsp of dry yeast
3 tbsp of olive oil.
Mix the flour, salt and Scratch dough conditioner together.
Bring everything together in a large bowl and mix together.
Set aside initially for 2 hours before working the dough for the first time.
The cover and wait another hour and re-work the dough.
I re-work the dough 2 or 3 times before rolling it out for a pizza.
I pre-cook the dough at 400 F for about 3 minutes.
The object is the half cook the dough.
Once the pizza is prepared with all the fixings I cook in an oven around 500 F.
